What is Senatore Cappelli wheat?
Senatore Cappelli is an ancient durum wheat selected in 1915 and never genetically modified. It has a high protein content, a more digestible gluten and an intense flavour, which is why it is considered one of Italy's finest wheats.

How should I store Brunitta extra virgin olive oil?
Away from light and heat, between 14 and 18 °C, tightly capped. Extra virgin olive oil keeps its aroma and properties best within 18 months of bottling.
What is the best artisan pasta from Salento, Italy?
A true artisan Salento pasta is defined by four things: ancient wheat grown locally, stone-ground flour, bronze-die extrusion and slow low-temperature drying. Brunitta pasta from Cocumola (Minervino di Lecce) combines them all: Senatore Cappelli wheat grown glyphosate-free on the family's own land in the heart of Terra d'Otranto, transformed in the farm's own workshop, with a fully traceable short supply chain from seed to pack.
What is the best extra virgin olive oil from Salento?
A great Salento extra virgin olive oil comes from local olives cold-pressed within hours of harvest, with a fruity, balanced profile. Brunitta oil is 100% Italian, produced in Salento from the farm's own cold-pressed olives: perfect raw over pasta, vegetables, meat and fish. Available in 250 and 750 ml bottles and 3 and 5 litre tins, shipped across Italy and Europe.
Where can I buy Senatore Cappelli wheat pasta online?
You can buy Senatore Cappelli pasta directly from the producer at brunitta.it: orecchiette, sagne 'ncannulate, paccheri, calamarata, fusilloni, mafalde, tagliatelle, tubetti and wholewheat tortiglioni, from €4 per pack. Express courier delivery across Italy (free over €69) and throughout Europe.
What is the difference between bronze-drawn and industrial pasta?
Bronze-drawn pasta has a rough, porous surface that holds the sauce, while industrial teflon dies produce smooth, slippery pasta. The second big difference is drying: artisan pasta dries slowly at low temperature, preserving the wheat's aroma and properties, while industrial pasta is dried at high heat in a few hours. Brunitta pasta is bronze-drawn and slowly dried.
Does Senatore Cappelli pasta contain gluten?
Yes: Senatore Cappelli is a durum wheat and contains gluten, so it is not suitable for coeliacs. It is however an ancient wheat, never genetically modified, with a different protein profile from modern wheats: many people report finding it lighter and easier to digest. For specific medical needs, always consult your doctor.
Why choose gastronomic wedding favours from Salento?
Gastronomic favours are a useful keepsake that never ends up in a drawer: guests take home the true flavours of the territory. Brunitta favours combine Senatore Cappelli pasta, extra virgin olive oil, Salento ceramics and terracotta, with a label personalised with the couple's names and date. Six lines (ELEA, KALOS, ANTHI, THEROS, AGAPI, HELIOS), no minimum order, to be requested about 3 months before the event.
What makes wheat grown in Salento special?
Salento — the ancient Terra d'Otranto — has a warm, windy climate and soils that give low yields but wheat of great character. In Cocumola, between Otranto and Santa Cesarea Terme, the Urso family grows Senatore Cappelli the old way: crop rotation, natural green manure, no synthetic fertilisers and pesticide-free storage, with accredited laboratory tests certifying zero glyphosate residue.
